Presentation Title: Managing Back of House Organics Collection at an International Airport

Presentation Description: I will present about the best practices regarding collecting organics in a back of house setting. I oversee the Minneapolis- Saint Paul International Airports waste program and we have a robust organics collection requirement for our Food and Beverage tenants. This requires constant auditing, oversight and education. There are many issues that are present when working at a large airport with tens of thousands of employees and over 30 million passengers a year from various waste backgrounds.
